Ingredients:
For the Wada:
- 1 cup urad dal (split black lentils)
- 1/2 teaspoon ginger, grated
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Oil for deep frying
For the Yogurt Mixture:
- 2 cups plain yogurt
- 1/2 teaspoon roasted cumin powder
- 1/2 teaspoon chaat masala
- Salt to taste
- Water (as needed for thinning the yogurt)

Instructions:
1. Soak and Grind:
- Rinse the urad dal under cold water and soak it in enough water for about 4-5 hours or overnight. Drain the soaked dal and transfer it to a blender or food processor. Add grated ginger, cumin seeds, asafoetida, and salt. Blend until you achieve a smooth and fluffy batter. If needed, add a little water to assist in the grinding process.
2. Fry the Wada:
- Heat oil in a deep frying pan or wok over medium heat. Take a small portion of the batter and drop it into the hot oil. Repeat this process, making several small round dumplings. Fry the wada until they turn golden brown and crispy. Once cooked, remove them from the oil and drain excess oil on a paper towel.
3. Soak and Squeeze:
- Take a large bowl of water and soak the fried wada in it for about 15-20 minutes. This step helps in softening the wada and making them easier to soak in the yogurt.
4. Prepare the Yogurt Mixture:
- In a separate bowl, whisk the plain yogurt until smooth. Add roasted cumin powder, chaat masala, and salt. Adjust the consistency by adding a little water to make a thick yet pourable yogurt mixture.

- Squeeze out the excess water from the soaked wada and place them in a serving dish. Pour the yogurt mixture generously over the wada, ensuring they are fully coated.
